Mushroom & Onion Skillet Orzo

A beautiful vegetarian dish that comes together in one skillet for a hassle-free weeknight meal. Pair it with a bright green salad, and your plate has never looked so happy.

Vegetarian dishes are a great addition to your weekly meal plan, especially when they can be made in ONE skillet. This creamy, mushroom-packed orzo comes together quickly and easily with minimal clean up. My young boys devoured this, and my husband and I loved it accompanied with a side salad.

Missing the meat? Stir in some shredded chicken or serve with a piece of fish on the side. Voila. Truthfully though, I don’t think you’ll miss the meat in this dish – it is so packed with mushrooms which give is a deep flavor. I also make mine with beef broth (I know, not completely vegetarian then) which gives you a hint of meat without needing to use a piece of meat. Absolutely use vegetable broth if you want to keep this 100% vegetarian.

Mushroom & Onion Skillet Orzo

Instructions
  1. Prep ingredients: slice mushrooms and onion. Mince garlic (unless using jarred). Chop fresh parsley.
  2. In a large skillet, heat olive oil and add mushrooms and onions. Cook until starting to soften then add in garlic, salt, pepper, and red pepper flakes.
  3. Once onions and mushrooms tender, add in dry orzo. Cook until a few pieces of orzo start to brown (about 3-4 minutes). Then add in the broth. Bring to a simmer and cook for 10-12 minutes until 75% of the broth is absorbed and orzo is tender.
  4. Turn heat to low and add in the cream cheese. Stir constantly until cream cheese is incorporated.
  5. Turn off heat, stir in the parmesan until melted. Sprinkle in the parsley and serve!
