Mushroom Parmesan Pasta Skillet (One Pan & Vegetarian)

  1. Dice onion, coarsely chop mushrooms, and mince garlic.
  2. In a large skillet, melt butter over medium heat and add mushrooms and onions. Saute for 7 minutes and then add garlic. Saute for additional 1-2 minutes.
  3. Add in pasta, 2 cups of water, salt, and pepper.
  4. Bring to a boil then reduce to a simmer. Simmer for 15 minutes.
  5. Add additional 1/2 cup water if pasta isn’t quite done then simmer for additional 5 minutes.
  6. Once pasta is al dente. Reduce heat to low, stir in parmesan cheese and parsley.
  7. Turn the heat off and let sit for 5 minutes.
  8. Stir in the sour cream and serve with a sprinkle of parmesan and parsley.
Recipe Notes

You can use a different kind of pasta if you would like! I like Farfalle for this because they provide a nice little bed for the mushrooms.
